A Sweet Idea // Oreo Truffles

For Halloween, one of my co-workers made these Oreo truffles and oh my gosh! They were deliciously amazing! I knew I had to share this with y'all. I love that this kind of dessert works for anytime of the year, you know just switch up the holiday sprinkles for any occasion...plus it's a quick and easy no bake chocolate goodness that everyone is going to love. 
 1. Break 15 oreo cookies into pieces and pulse in a food processor.
2. In a bowl, mix oreo mix with 4 oz. of softened cream cheese. Mix together.
3. Form the oreo and cream cheese mixture into balls. I was able to make 15. Place on a sheet of parchment paper and let freeze for 30 minutes.
4. Heat up chocolate chip morsels in the microwave for about 45 seconds.
5. Dip each truffle into the melted chocolate using a spoon to fully cover it.
6. Sprinkle with holiday sprinkles and let freeze for at least 15-30 minutes.

Delicious Soft Pumpkin Chocolate Chip Cookies

So I'v officially fallen into the whole pumpkin craze this year. I love love love chocolate chips cookies and got the itch to bake some from scratch over the weekend. The only thing was that I couldn't get the idea of maybe how amazing pumpkin chocolate chips cookies would be...I mean I hardly even eat pumpkin pie at Thanksgiving so this was really a gamble for me. I was just really curious about the whole thing and quickly looked recipes on Pinterest. I followed this one with a minor tweak...yum yum yum, these are mouth watering good :)
In one bowl mix together
1 cup of canned pumpkin, 1/2 cup vegetable oil, 1 cup of white sugar, and one egg.
In a separate bowl, mix together
2 cups of flour, 2 tsp baking powder, 1 1/2 tsp cinnamon, *1 tsp pumpkin pie spice, 1/2 tsp salt.
Dissolve 1 tsp of baking soda with 1 tsp milk and stir into the wet ingredients.
Add your bowl of dry ingredients into the wet ingredients.
Add 1 tbs of vanilla and stir in one 11 oz bag of chocolate chips.
Line a baking sheet with parchment paper and spoon mixture into separate cookies.
Bake at 350 for about 10 minutes.
*My tweak was adding the pumpkin pie spice because I wanted to taste more of the pumpkin flavor. See the original recipe here.

A Sweet Idea // Cool Whip Ice Cream Sandwiches

A few years ago I found out about cool whip ice cream sandwiches from Holly. She's always posting about yummy recipes and these were too easy to not try. I made them for my family and they loved them. Then I made for a party at Chris's house and everyone loved them. So you know what...I kept making them. Since then I've tried a few different variations from plain old vanilla. Right now sprinkles and reese's pieces are my current fav. 
Toppings (I'm using sprinkles & reese's pieces), graham crackers, cool whip
*I made two variations: plain cool whip with sprinkles on top & cool whip mixed with reese's pieces*
1. Chop reese's pieces and mix into cool whip.
2. Put a good spoonful of cool whip to graham cracker. 
3. Add sprinkles to sandwiches with plain cool whip!!
4. Top with graham cracker and place in freezer for at least an hour.
